WHILE pasta is cooking, place a large saute pan over medium heat. Add butter and melt. Add pancetta and cook until crispy. Remove pancetta with a slotted spoon and transfer to a plate lined with kitchen towels. Set aside. Reduce heat to low. To the pan add- cream, cheese. Stir to combine. Add pasta, and crispy pancetta. Toss to combine. If too thick, add a few tablespoons of reserved pasta water to loosen.
